Thailand is a much more developed country than its neighbours. Thai people are nicer in the north, I guess that being due to it being more authentic and less tourism centred - as opposition to the south where many islands purely depend on tourism and charge high prices. Despite being nice, Thai people are noisy and live on a what appears to me to be a "I don't care" lifestyle philosophy - which can quickly become irritating.
The local cuisine is vast and varies across the country. Street food stalls are common all over the place, Thai people love to eat and a food stop is even included in long ride bus tickets. Most of the typical food is either deep fried, either made out of noodles and sauces, which you will guess is not easy to keep a dietary food intake.
